There is a new address to discover at Jumeirah Marsa Al Arab. Named after a once-hidden room within the hotel, 1206 opens its doors on 30 October 2026, introducing a more intimate approach to fine dining in Dubai.

With Head Chef Stephanie Haywood at the helm and interiors by acclaimed design studio AvroKO, the restaurant brings together seasonal cuisine, thoughtful craftsmanship and an expansive terrace overlooking the city’s iconic skyline.

A NEW CULINARY PERSPECTIVE

Named after a once-hidden room within the hotel, 1206 introduces a dining concept centred around seasonality, provenance and a genuine appreciation for ingredients.

At the helm is Head Chef Stephanie Haywood, whose approach combines carefully selected produce with traditional techniques such as fermentation, curing and slow cooking. Working closely with local suppliers, the kitchen focuses on responsibly sourced ingredients and making full use of each product wherever possible.

Fresh herbs and botanicals grown in the restaurant’s terrace garden add another dimension to the menu, creating a connection between the kitchen and its surroundings.

Rather than relying on elaborate presentations, the philosophy is refreshingly straightforward: allowing exceptional ingredients and precise cooking to take centre stage.

WHERE DESIGN MEETS GASTRONOMY

The setting is equally distinctive. Designed by internationally acclaimed studio AvroKO, the interiors take inspiration from Levantine coastal architecture, combining warm materials, crafted details and an understated sense of elegance.

An expansive outdoor terrace offers sweeping views stretching from Jumeirah Burj Al Arab to Burj Khalifa, providing a striking backdrop for an evening in Dubai.

It is an approach that favours atmosphere and craftsmanship over unnecessary extravagance, creating a setting where architecture and gastronomy complement one another.
